Kaulós was created thanks to collaboration between Terre del Gufo and Roberto Oppedisano, enthusiast agronomist and winegrower at Caulonia (RC), in the area of Calabria which is the most extreme both under the geographic point of view and under the climatic one. It is a grape blends of Calabrese (60%) and Magliocco (40%) which are cultivated on chalky soils near the sea. Grapes are exposed to extreme climate conditions and the consequence is an early dehydration. They are harvested in August with very high concentration of dry extracts and of reducing sugars. Water stress and dehydration lead to tartaric acid concentration giving a liveliness and a freshness that one doesn’t expect in a wine of extreme southern latitude. The Kaulós has got a rich  southern character and it is suited to rich traditional cuisine and to meditation.
